InStock - Turning Food Surplus into Delicious Meals

According to statistics, one-third of worldwide food production is wasted which comes down to 1.3 billion tons of food waste per year. One of the reasons it happens is because mass retailers buy too much food, and eventually waste about 40% of it because customers care not only about the taste but also about its look and smell.
Tackling the problem of food waste, InStock restaurant located in Amsterdam was able to come up with an idea to turn this wasted food into appealing, delicious, and safe-to-eat meals. They apply this concept by picking up unsold food products at the local stores, including blemished vegetables or fruits, seafood surplus, one day expired bread, and then with the team of skillful chefs turn it into an enjoyable and safe meal.
Based on their reports, InStock saves about 2000 kilograms of food per week, that would otherwise be wasted. By serving their food, they make customers aware of its wastage. One of the examples is an overripe banana that serves as a perfect ingredient for banana ice cream or Brussel sprouts make the perfect kimchi.
Their tips are: do not buy what you don't need, keep food at right temperature, use the rule first in, first out.
